Gooey Butter Cookies

1/2 cup butter, softened

8 oz cream cheese, softened

1 egg

1/4 teas. vanilla extract

1 (2 layer) package butter-recipe yellow cake mix

1-2 cups confectioners sugar

Beat the butter, cream cheese, egg and vanilla in a mixing bowl until light and fluffy. (be patient, it may take awhile). Stir in the dry cake mix. Chill, covered, for 30 minutes. Drop the dough by teaspoonfuls into a bowl of confectioners sugar and roll into balls. Arrange on cookie sheets lightly coated with nonstick cooking spray. Bake at 350 degrees for 12 minutes until golden brown. Cool on wire racks

Optional: roll in shredded coconut before baking.
