Seasons Bleatings - July 07 - goats
Meet HMFF Cozette... who has
taken over her mother's place as "house-milker"! Cozette
is a solid black French Alpine out of the herd matriarch, HMFF
Henriette (Henriette is now 12 years old, retired from the milking lineup but
playing nursemaid to her and all the other dairy kids)...
Here is Cozette on the stanchion ready for
milking!
I love the
picture below because it shows Cozette's "winter fuzz" over her hips
like dandelion fluff !

This is the
working end of HMFF Cozette on grass and a handful of goat chow...I'm afraid
to see what would happen on alfalfa and a high percentage milking ration. This
is her first lactation and she is already knocking the socks off my present
house milkers. No two-finger milking here.. and lots of milk in the pail.
She is out of Beniesoit Tate Tristan and was bred back to him last fall . This
spring she produced a single solid black (with a white spot on his side) buck
kid.

So what to do with all
that milk after the freezer is full? Here is a recipe for
dessert crepes using goatmilk cheese (from the recent ADGA
newsletter)
Make crepes using your favorite recipe... then
fill with this delicious filling:
Creamy Raspberry-Chevre Crepe
Filling
11 oz plain goat chevre
2 oz table cream
3-4 drops almond extract
6 oz raspberry jam
4 oz chocolate sauce
1 pint raspberries
In a mixer, blend cheese, extract and cream. Spread
approx. 2 oz of cheese onto each crepe. Spread jam on top of cheese and roll up
crepe. Drizzle with chocolate sauce on top.
